Personalized Pie Cookies
Looking for a last minute treat for that homemade touch? Why not whip up a batch of personalized apple pie cookies. They're simple, quick, and ready in 20 minutes to serve. You'll surely wow your friends with these hand handle mini pies.

Apple Pie Cookies
Ingredients:
1 box frozen pie dough, thawed
1 egg
splash of water
Pie Filling:
1 apple, peeled and diced
2 Tbsp sugar
1/2 teaspoon cinnamon
Pinch of nutmeg, cloves and ground ginger
Directions:
Preheat oven to 350 degrees.
Roll out pie dough sheets onto a floured cutting board.
Using a 3" cookie cutter, cut out 9 circles for the bottom of the pie cookie. Place the pie bottoms onto a lined cookie sheet.
Combine apples, sugar, cinnamon, nutmeg, cloves and ginger for the pie filling.
Place 1 Tbsp of apple pie filling onto the center of each pie cookie bottom.
Using the second sheet of pie dough cut out another 9 (3") circles for the top of each pie cookie. You can personalize each cookie by stamping a personalized message on the top of each piece of pie dough.
Place the piece of dough over the pie filling.
Mix egg and water and brush on top of the pie cookies.
Crimp the edges of the cookie so the filling doesn't leak out.
Bake 12-15 minutes or until golden brown.
Cool 30 minutes.
